Guji, Hambella - Natural (Green)

from $80.00

Tasting notes: Geranium • Anise • Fruit • Nut Chocolate

The villages of Dari Kojuwa and Geda Baili are located in the Hambela Wamena district of West Guji, Oromia, bordering the renowned Gedeb Yirgacheffe district. The regions are celebrated for their high altitudes and organically rich soils, which together create the ideal conditions for cultivating some of the world’s finest coffees.

Local washing stations collect ripe cherries from farmers in the surrounding areas, ensuring only the best produce makes its way to you.

Coffee grown in Ethiopia is naturally organic, as landrace varieties harmonise with the environment that provides a natural environment for pest control and fertiliser.

Coffee grown in these areas are considered to be a mixture of Heirloom varieties, native to Ethiopia, the birthplace of coffee. After meticulous handpicking, overripe and unripe cherries are carefully sorted out, leaving only the finest red cherries. These cherries are then spread on raised drying beds and sun-dried under controlled conditions. To ensure uniform drying, they are turned frequently throughout the day until they achieve the optimal moisture level of 10.5%. This meticulous process preserves the beans’ unique flavour profile and quality.
