NEW* Ethiopia, Rachia - Washed Grade 1

This coffee comes from the Idido village in Yirgacheffe, Ethiopia, where more than 350 smallholder farmers deliver carefully hand-picked cherries to the Gizat washing station.
Once received, cherries are density sorted and then fermented for 36–72 hours before being washed and floated to remove any defects. The coffee is dried slowly on traditional African raised beds for 8–15 days, allowing consistent airflow and temperature control. During this time, the coffee is turned regularly to ensure even drying and clarity in the cup.
When the beans reach an optimal moisture content of around 11.5%, they’re rested locally before undergoing further processing — sorted by colour, density and screen size — and then milled, ready for export.
Yirgacheffe is world-famous for coffees of elegance and precision, and this washed Rachia lot is a beautiful reflection of that heritage.
Expect a clean, refreshing cup with lifted acidity, delicate florals and a bright, refined finish — a true expression of place and process.
