Within the department of Santa Ana, a group of small-holders toil in the vestiges of volcanic activity. Thanks to ash-enhanced soil, plants have rich nutrients to draw upon and at their high elevations, the cherry maturation period is slow and steady, optimising flavour and integrating acidity. Thanks to dedicated and skilled nurture in these favourable conditions, the Santa Ana farmers have built a strong reputation for sweet and balanced coffees.

Now on the mend from both the pandemic and unexpected hurricane activity, Santa Ana growers are turning their attentions to climate change – and to what will best sustain their crops, community and the wider environment. Damaged crops have been replaced with disease-resistant varieties and processes are increasingly water-efficient. Santa Ana moves forward, fuelled by a collective passion to continue producing their classically sweet and balanced washed bourbon lots.
